Breakfast for dinner

Susie's picture

I am a big fan of serving eggs for dinner - it's easy, healthy and my kids love them.My favorite dinner as a kid were scrambled eggs, bagels and Mary Kitchen's canned hash (the hash it was heavenly back then - but the thought of that today ain't too great....)

I just found these recipes and thought I'd pass them along. I don't think my picky eater would try everything but I could change them up a little.

We have breakfast for dinner

JuneSlager's picture

We have breakfast for dinner occasionally and although the kids often grown when they hear that is what we are making they inevitably enjoy the meal. Our favorite thing to do is make scrambles as the kids like to call them. That is when we add some form of meat, whether it is bacon, ham or even left over steak to scrambled eggs (or often egg starts) and then we add additional items such as spinach, caramelized onions, peppers, sun dried tomatoes, and of course different kinds of cheeses. It is actually a great way for us to incorporate left over items in a new meal.

I love breakfast for dinner

I love breakfast for dinner - especially if it involves hot sauce! It's a nice break from the usual and we never have any complaints.

Speaking of breakfast foods we would eat as kids but no longer...how many of you had SPAM as part of your breakfast as a kid???? We had SPAM quite often.

LOL spam. I grew up on spam.

LOL spam. I grew up on spam. I put spam in my fried rice and make it occasionally with white rice and soy sauce for my kids. They love it but I know it's not good for them. A freind of mine makes california rolls for his children with spam. I was buying a four pack of spam at costco once and the clerk was like how do you make spam? Well me and the bagger or boxer whatever they have at costco started teling her how you eat it. It was so funny, she was scared to ask.

I love breakfast for dinner and one of my girls does too. My oldest did, until she ate breakfast for dinner one night and didn't feel good. It had nothing to do with the meal, but now doesn't want it anymore. Oh, she will have breakfast for breakfast but... I guess we will wait awhile and hope she comes back around.

my kids are thrilled when about twice a year I'll whip up a big sunday feast of pancakes and/or waffles, bacon (we love that can of hash too!) for dinner.
Fun surprise and treat.
fun to use cookie cutters with the pancakes for fun shapes. :)

That sounds like fun. If my oldest ate eggs (he doesnt like them) then we'd definitely try this out. However, on occassion he does like cereal. I guess once in awhile changing it up can make it interesting.

One of my all-time favorites

not_the_mama's picture

One of my all-time favorites for BFD (we called it that when we were kids, so that we could say BFD) is pigs-in -a-blanket.

Nuke some sausage links (even turkey sausage is great). Using the recipe on the box, make a batch of pancakes. Let the kids roll a sausage up in the pancake and eat it with their hands. Some people like to dip it in syrup.

I posted this recipe a while

braybee's picture

I posted this recipe a while ago, but I think it's well worth a re-post under this topic!!! Very easy, very yummy!

CREME BRULEE FRENCH TOAST
1/2 c unsalted butter
1c packed brown sugar
2T corn syrup
6 thick slices bread (challah works best, but french is fine)
5 eggs
1 1/2 c heavy cream
1t vanilla ext
1t orange liquor (Grand Marnier or Triple sec) - i omitted this and used a little orange zest instead.
Salt to taste

-Melt butter, mix in sugar and corn syrup. Pour into 9x13 pan.
-Arrange bread in single layer in pan.
-In bowl, whisk eggs, cream, vanilla, orange and salt. Pour over bread.
-Refrigerate 8 hours.

Preheat oven to 350 degrees. TRY TO BRING FRENCH TOAST DOWN TO ROOM TEMP BEFORE BAKING.
Bake uncovered 35-40 minutes or until golden brown.

DELISH!
I usually throw some slices of thick cut bacon on a sheet pan after I remove the french toast from the oven. Bake bacon for approx 10-15 minutes. So much less messy than frying up bacon in a pan....and it holds it shape and doesn't shrink as much!

Great recipe for breakfast or dinner. Also works really well for brunches!

OMG - this sounds so
