We have so much powdered sugar in the pantry it's not funny. I think it's breeding in there!!!

I'm looking for ideas on how to use it up besides making frosting.

You must make this - my mom made it all the time when i was growing up(she's a buckeye). I don't have her recipie, but I have used this one before....it's basically the same formula for all buckeyes:peanut butter, powdered sugar, vanilla and butter, dipped in melted chocolate.
If you don't want to use a double boiler, I have used that candy making chocolate that comes in a block, I just melted that and I think it sets up better.

Buckeyes

INGREDIENTS
1 1/2 cups peanut butter
1 cup butter, softened
1/2 teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

DIRECTIONS
In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

I use powdered sugar to coat baking pans instead of flour (that way if it stays on the baked cake it tastes lots better), also use when rolling out dough to keep from sticking to the counter or wax paper.

buy ready made biscuits from the store. After you open them, place about 5-6 chocolate chips in the middle of each biscuit. Fold it up and put it in a deep fryer for a few minutes, about 350 degrees. Then take it out and dust with powered sugar...homemade donuts!!!
