I just tried this compilation of leftovers to make a pot pie of sorts and it was quite yummy!
the leftovers:
chicken
sweet potatoes
asparagus
then I added:
salt
pepper
lemon seasoning
1/2 can bananna nut squash soup
slivered almonds
and topped it with a layer of puff pastry, butter spray and more slivered almonds.

No kidding! Simple Chicken is a lost art!
I love the already Roasted Chickens that the markets are offering now a days. I purchase 2 to 3 a month. When I get home I shred them and you have such quick easy meal.
My top easy favorite is.
Chicken Ceasar Salad ( this is my families fast food. Just the already shredded chicken and a bag of salad.)
Plus it so nice to have it on hand to make a quick Chicken Soup when you want. The chicken is already cooked so it ony takes about 10 minutes to soften the veggies you choose to add and I add boxed chicken broth (my kid love it!)
