My son usually doesn't care for zucchini and neither does my husband. I found that this recipe was a hit!
Cut zucchini into bite sized cubes. Coat in italian dressing(I used Kraft fat free). Then coat in a mixture of seasoned breadcrumbs and parmesan cheese. Coat a cookie sheet with cooking spray and bake about 10-15 min until tender and starting to brown. They were delicious!

Using eggplant for this
Using eggplant for this recipe would probably taste good, but be a mushy mess due to the high water content.
You could try cutting the eggplant up, laying it flat on a sheet pan lined with a clean towel or paper towels and liberally salt the eggplant pieces....let them sit a while and continuously dab them. You'll be surprised how much moisture comes out.
After doing this, the recipe might work better.

They were great! Thank you so much for the recipe. I am learning how to cook and it was something simple I could do. My husband hates vegetables, but he ate some of them to be a good example to get our kids to eat them too. My 2 year old loved them. My 5 year old was not so sure, but he ate a couple.
