Peanut allergies and school lunches

My 6 year old is in a class with two girls with life threatening peanut allergies and I'm scared to death of sending my son to school with the wrong food. Since he used to eat PB&Js every day, we now have to think up new ideas for lunches. He likes ham sandwiches, but with his adhd and autism I don't want him to eat all the nitrates in lunch meats. You guys are smart, creative people, could you help me to come up good alternatives, please???

Does he like Hard Boiled Eggs? Sometimes I make sandwhiches out of left overs: pot roast or meatball sandwhiches. We also have a thermos to keep soups warm (my 8 year old loves soup for lunch). I think Laura Ingalls got bread and butter and an apple. Wish it was that easy now! Good luck!

How about a salad with veggies and ranch dressing? My kids love the cut up cucumbers, carrots and lettuce.

I know, my daughter's school is a peanut free zone (I need a chocolate free zone myself, but that's another show) and I am having to get creative with the lunches too.

What's with the nitrates?! I have resorted to lunch meats as well!

How about next time you order pizza, set aside a few slices and cut them into little bite-sized squares. Somehow it does not seem like leftover pizza that way. Plus you can even freeze a few portions and sprinkle them into future lunches.

Also my daughter likes the baby carrots, plumb tomatoes and Disney cheeses that I think only Fry's has. Also we sometimes buy the all-natural deli meats at Walmart of all places (hopefully nitrate free?) and perhaps a walk through Whole Foods might inspire some ideas.

Does he like hummus? It's a good protein source & can be used as a dip for veggies, whole wheat pita, etc or smear it on a sandwich topped w/ his favorite veggies.
Or, cheese is good for sandwiches or crackers.

I wish he liked hummus, that would be great! Or even ranch dressing. Or tomatoes. Or cold pizza. Grrr... He's a picky eater obviously. We're doing some crackers and cheese and I've resorted to buying small containers of applesauce and mandarin oranges. And carrots, too!

As for the nitrates, we try to keep his food as unprocessed as we can since he has ADHD and Aspergers Syndrome. A good clean diet without the chemicals really helps kids like mine! (and all of us!) Ham isn't exactly a great food, just really, really yummy!
