Single Moms and Eating

Does anyone have any solutions for eating as a single mom? Feeding my daughter is no problem - she likes predictable things I can always have on hand and prepare very easily.

I am the problem! I am having a hard time finding easy to prepare and healthy meals for one. I need some creative ideas please!

I am not sure if you like avocado by itself or in your food but this is one site that have a lot of healthy receipes with avocados in them. In each receipe, there is a box next to the serving and you can plug in "1" as yourself and it will recaluate the receipe just for 1 person. You can always take the avocado out of the receipe and still have a great meal :)

I have gone from cooking for 6 to cooking for just myself and my daughter. Occaisionally my grown children will come home for meals. What I have started to do is. I still buy roasts and larger meats. I will cook them up as if I was cooking for everyone veggies,the works. I then divide the food up into individual size meals and freeze them. It cuts down on the amount of cooking I have to do and I always have something well balanced and healthy to eat. This has also cut the amount of time I spend at the grocery. The way I see it any time I can pull from errands and thin is more time to spend with my daughter. Although she does like to help with meal prep.

If you don't have the time or want to mess with figuring ourt what to make for dinner try one of those Meal Makers or My Sisters kitchen places. I can get a pre assembled meal for 3 (use the extra one for lunch the next day) at meal makers and they are quick and easyand healthier than the predictable kid meal option for your child too.

Trader Joes sells food in

Trader Joes sells food in smaller quantities that you can cook once and eat twice. Many of their meats are indiviually vacuumed packed so you can cook one and freeze the other. Their orange chicken is yummy and comes with two bags of orange sauce. You can cook half the meat and use one bag of sauce and save the rest for a later date. They also sell frozen rice so you don't have to make a whole lot.

I am the only person in my house who likes shrimp so I buy the frozen kind and take handfuls out to cook just for me! I love to make shrimp quesadillas with goat cheese, mozzarella cheese and green chilies. Yum!

Buy frozen meatballs, or make them and freeze individually, and take a few out for pasta, meatball subs etc.

Season and cook a few chicken breasts. Freeze all but one to use later in salads, pasta, soup or sandwiches. We also buy frozen chicken breasts and I cook just as many as I need each night. We love salads with chicken, mandarin oranges, nuts and cranberries. You can buy fruit in small cups and use only what you need.

There are cooking-for-two cookbooks out there you can use, maybe even a website or two? Basically, if you cook and freeze, you will have enough for you and your daughter or just you when you need it. Have fun! Now you can eat what you like and not worry so much about what other people like! That's what I call culinary freedom!!!
